I am not much of a cook. I'm sure people who know me would be very amused to hear me talking about cooking. But I do think it's a really interesting way of thinking about chemistry because it's so applicable to our daily lives. So for our first question, I want you to imagine we're about to enjoy an appetizer salad and we have a question about emulsifiers. How does mustard or any other emulsifier prevent salad dressing from separating? ZOE: Yeah, so in order to understand the answer to this question, you wanna think about why is the salad dressing separating in the first place.

And that's because you generally have two different ingredients that aren't mixing like oil and water. That's classic, everyone knows that oil and water don't mix. And the reason why is because they're called polar and nonpolar substances, the molecules basically have their electrons arranged differently and that means that they don't like why bumble is a waste of time mix with each other.

Now, an emulsifier belongs to a group of things called surfactants. They're really just a class of molecules that have both a polar and nonpolar end to them. So it's kind of the best of both worlds. I'm wondering if you could reflect on that a little bit more of how we can use our kitchen to explore these early chemistry principles.
